Zillycakes’ Italian Meringue Buttercream
Ingredients: 2 ¼ cup granulated sugar ½ cup water 1 cup egg whites at room temperature (about 8 extra large eggs) 1 ½ pounds unsalted butter at room temperature (6 sticks) 2 tsp. real vanilla pinch salt
Tools needed: Heavy saucepan Pastry brush Oven mitts 4 or 5 quart stand mixer or strong hand mixer and 5 qt. deep metal bowl Kitchen timer Spatula Wooden spoon
1. Mix sugar and water in saucepan until all sugar crystals are wet. Brush sides of pan with wet pastry brush to wash down sugar crystals on the side of the pan. Turn burner to high and bring sugar to a boil; do not stir the pan or interrupt the boiling process or your sugar syrup may crystallize!
2. While the sugar is heating, crack and separate your eggs. Make sure there is no yolk in your egg whites, or your meringue will not whip to stiff peaks.
3. When the sugar is at a rolling boil, set your timer for 5 minutes. After 5 minutes, begin to whip your egg whites at high speed with the whisk attachment. Set timer for 2 minutes.
4. After 2 minutes your egg whites should be at the stiff peak stage. Turn the burner off, put your oven mitts on, and immediately pour the sugar syrup into the stiff egg whites with the mixer on high. NOTE: You must pour the sugar syrup in a thin drizzle to avoid cooking the eggs! You must also try to pour the syrup as close the edge of the bowl and as far away from the beater as possible, so that the sugar doesn’t spin out onto the sides of the bowl. Use a wooden spoon to coax the remaining syrup in the pan into the mixing bowl (hot syrup will melt a rubber spatula).
5. Continue to whip the sweetened meringue mixture on high for 10 minutes. Caution: the bowl will be extremely hot to the touch at first. After 10 minutes the mixture will have cooled enough so that the butter will not melt when added. NOTE: this can take more than 10 minutes on a hot summer day.
6. Add softened butter ½ stick at a time with mixer on low until butter is incorporated. Add vanilla and salt. Beat on medium speed until light and fluffy. If mixture appears curdled at first, continue to beat and it will become silky and smooth as it cools.
7. Store in covered container for 1 day at room temperature, 1 week refrigerated, or 3 months frozen. If refrigerated or frozen, be sure to bring buttercream back to room temperature before re-beating to restore silky texture.

Melting Pot: Feasting on Fondue
You don't have to go Switzerland for Fondue. Artvoice stopped out to the Melting Pot at the Walden Galleria for a firsthand taste of the famous European dining experience. It turned out to be more than we expected, so we've turned our visit into three separate videos. What used to be a musical movement enriched by culture and heritage and energized by struggle and oppression has become all too lollipop and gumdrops. That’s where Depree comes in. Inspired by the founders of the Differential Flavor Crew, Tony Estevez and Infinite, as well as other gurus of the game like Storm and Ken Swift, he began breaking in late 1999 and hasn’t missed a beat since. His dedication to the art—and it is an art—of breakdancing has made him the current leader of the Differential Flavor Crew as well as a much-respected b-boy in the community and the like.
In 2005 Depree founded Verve Dance Studio, which has become the home of the Battle @ Buffalo, a monthly event where b-boys and b-girls show up to display their skills. The Buffalo native has become a driving force behind Buffalo’s own breakdance and hip-hop dance scene.
Battle @ buffalo is a monthly b-boy b-girl event that happens at Verve Dance Studio downtown Buffalo New York. It is an all ages event that features a 16 person one on one bboy bgirl competition. There is also an 8 person funk styles battle that happens as well. Mr. Schulz told me he wasn't coming home this past holiday....well he showed up last minute and Justin Rose was gracious enough to host us at GCR AUDIO and record one of Dave's new songs of his album Connect. Here is "Everything"
The instantly infectious, accessible but often quirky 10 track collection also features extremely well connected players Schulz has admired for years, including Daniel Lanois (U2, Bob Dylan, Scott Weiland, Peter Gabriel), bassists Tony Levin (King Crimson, John Lennon, Yes, Pink Floyd, Seal) and Mike Porcaro (Toto) and drummers Robin Dimaggio (David Bowie, Paul Simon) and Randy Cooke (Ringo Starr, Dave Stewart). Three tracks were produced by another longtime Schulz associate Matt Gruber, whose credits include everyone from Carrie Underwood and LeAnn Rimes to Queensryche.
Schulz didn’t have the overriding concept of Connect in place from the start, but he began noticing as he was writing songs for the project that a similar theme was emerging. While his musical associations are an obvious hook, his lyrics tap into more universal themes about the need for and the conflicts inherent in simple human relationships. One of the symbols he uses to express his sardonic fear that technology (Twitter, texting, etc) may replace actual human contact is the smashed, discarded piano in an abandoned house on the back cover of the CD.
“I think the music on the album reflects the diversity of styles that I have played over the years with some truly incredible musicians,” says Schulz. “I’m really excited for more people to hear it, and I have put together a great new band of close friends to help me convey what it means to truly Connect—and that’s with the most important people of all, the audience.”

TOPOGRAPHIES @ the Albright-Knox
Topography, the practice of creating detailed maps or charts that define the terrestrial characteristics of a singular locality, was originally conceived by ancient cultures as simply “the study of place.” Customarily, topographical mapping and the study of topography result in large-scale, detailed, and carefully calibrated representations of nature’s nuances in relief. Unlike traditional maps, topographical maps utilize contour lines, and they also explore both natural and man-made features, taking into account not only vegetative and human-made features, but also local history and culture. All surfaces and aspects of a given terrain are explored; however, it is not just the three-dimensional qualities that are represented, but also the deception of these features that are concurrently discovered and exposed.
Topographies is an exhibition that draws its inspiration from the definitive aspects of topographical mapping by shedding light on artists who employ a visual language that oftentimes blurs the boundaries between the natural and man-made, while paying specific attention to detail, surface, and depth of imagery. Culled from the Albright-Knox Art Gallery’s Permanent Collection, the exhibition will feature works by Polly Apfelbaum, Jane Callister, Tara Donovan, Teresita Fernandez, Mark Fox, Ellen Gallagher, Udomsak Krisanamis, Heather McGill, Jorge Pardo, Emilio Perez, Ara Peterson, Ken Price, Clare Woods, and Carrie Yamaoka.
From romantically abstract landscapes to layered imagery that explores the underbelly of natural forms, this exhibition complements Ingrid Calame: Step on a Crack . . . , which opens September 25, 2009. Calame’s work, an inspired version of a topographical map, traces man-made stains and marks to create abstract and richly layered paintings and drawings. Both exhibitions will be on view through February 28, 2010.

Prefuse 73 is the alias of Scott Herren, an experimental hip-hop producer whose material often features MCs buried in the mix to become more a part of the sonic texture than a focal point. Herren began his career working in commercial studios in Atlanta, but later went on to more experimental work. His first record under the Prefuse name, Vocal Studies + Uprock Narratives, not only buried but cut up and spliced raps as well as allowing some more straightforward vocals from several MCs. The 2003 follow-up, One Word Extinguisher, carried on in a similar vein. That same year, Warp released Extinguished: Outtakes — a fascinating EP of beats and samples that ran through 23 tracks in about 35 minutes.
Surrounded by Silence, the proper successor to One Word Extinguisher, was released in March of 2005, featuring collaborations with rappers Ghostface and Aesop Rock, plus Blonde Redhead and EL-P. Three months later, an EP of recordings made with the band the Books appeared, titled Reads the Books. The next Prefuse record, 2006’s Security Screenings, was relatively collaboration-free; it featured only two guests, Four Tet’s Kieran Hebden and Tunde Adebimpe from TV on the Radio. Preparations, featuring Battles drummer John Stanier on one track, followed in 2007, and Everything She Touched Turned Ampexian appeared in early 2009. The Gaslamp Killer is a Los Angeles-based DJ whose eclectic style ranges from psychedelia and world music to dubstep and left-field hip-hop. Associated with Flying Lotus’ Brainfeeder Records, he made his production debut in the late 2000s with a series of EPs. Born William Benjamin Bensussen, he originally comes from San Diego, CA, whose downtown Gaslamp District’s bar scene inspired him to name himself the Gaslamp Killer in disgust for much of the patronage. Upon relocating to Los Angeles, he found a niche for himself amid the city’s massive underground party scene and ultimately found a home for himself as a resident DJ at the club Low End Theory, which resulted in a series of club-sponsored podcasts. He also released a series of mix CDs, among them Gaslamp Killers (2007), It’s a Rocky Road (2007), I Spit on Your Grave (2008), Hell and the Lake of Fire Are Waiting for You! (2009), and All Killer (2009), the latter a label showcase for the London-based world psychedelia imprint Finders Keepers Records. As a producer, the Gaslamp Killer made his debut in the late 2000s, releasing, for instance, a split single with Free the Robots, “The Killer Robots,” on Obey Records in 2008 and an EP, My Troubled Mind, on Flying Lotus’ Brainfeeder Records in 2009.

The '60s Swing in The Relapse: Anthony Chase interviews costume designer Ann Emo
In preparing to direct John Vanbrugh’s 1696 comedy, The Relapse, these elements resonated with Derek Campbell, who decided to set the current Irish Classical Theatre Company production of the play in London of the 1960s, the Carnaby Street era, a time of high fashion and sexual revolution when England relearned to swing again “like a pendulum do,” after the oppressively conformist 1950s.
Enter costume designer Ann Emo.
The resident costume designer for the theater department at Buffalo State College, Ann received her M.F.A. from NYU Tisch School of the Arts and began her career in New York City, designing for stage, dance, film, and opera for many years. She was the resident costume designer for the Theater and Dance Alliance (TADA), a children’s theater organization whose performers are children and young adults. She moved to Buffalo in the early 1990s, and continued her work as a costume designer and technician at Studio Arena Theatre, where she designed over 10 productions. She has also designed for the Theater of Youth, Shakespeare in Delaware Park, and the Jewish Repertory Theater of Western New York, as well as for GEVA Theater Center in Rochester.

Albright-Knox Artist-in-residence Ingrid Calame: Step on a Crack...
Born in 1965, the American artist Ingrid Calame is best known for her artworks based on tracings of stains and marks found on city streets and sidewalks that she transposes onto museum walls. In June 2008, she became the inaugural artist in the Albright-Knox’s Artist-in-Residence program. Battling wind, rain, sun, and the heat generated by steel production, Calame and her team made hundreds of square feet of drawings, which she then transformed in her Los Angeles studio into the drawings and paintings comprising this exhibition. The drawings, traced at numerous sites in and around Buffalo, have, in the words of the artist “stopped short of being symbols—they are captured images that combine history, physical fact, decay, memory, and personal experience.”
The Artist-in-Residence Program is made possible with major funding from the MetLife Foundation Museums and Community Connections Program and through the generous support of Sandy and Margie Nobel. Additional funding is graciously provided by the Phyllis L. Goldman Memorial Fund. Up The Yangtze
In China, it is simply known as “The River.” But the Yangtze—and all of the life that surrounds it—is undergoing a truly astonishing transformation wrought by the largest hydroelectric project in history, the Three Gorges Dam. Canadian documentary filmmaker Yung Chang returns to the gorgeous, now-disappearing landscape of his grandfather’s youth to trace the surreal life of a “farewell cruise” that traverses the gargantuan waterway. With Altmanesque narrative agility, a humanist gaze and wry wit, Chang’s Upstairs Downstairs approach beautifully captures the microcosmic society of the luxury liner. Below deck: A bewildered young girl trains as a dishwasher—sent to work by her peasant family, who is on the verge of relocation from the encroaching floodwaters. Above deck: A phalanx of wealthy international tourists set sail to catch a last glance of a country in dramatic flux. The teenaged employees who serve and entertain them—now tagged with new Westernized names like “Cindy” and “Jerry” by upper management—warily grasp at the prospect of a more prosperous future. Singularly moving and cinematically breathtaking Up The Yangtze gives a human dimension to the wrenching changes facing not only an increasingly globalized China, but the world at large.
